Game Day Italian Sausage Sandwiches

  • 3 lbs. Sweet or Hot Italian sausage, cut into 12 pieces
  • 3 tbl. Olive oil
  • 4 Garlic cloves, crushed
  • 2 Large sweet onions, peeled and thinly sliced
  • 3 Red Bell peppers, stemmed, seeded and sliced into strips
  • 3 Green Bell peppers, stemmed, seeded and sliced into strips
  • 12 Breadworks sausage rolls

In large skillet sauté peppers in oil until soft, about 5 minutes. Add onions and garlic. Season with salt and pepper and continue cooking, stirring frequently, until vegetables are lightly browned, 10-15 minutes. Pepper mixture can be made ahead, reheated at serving time or served at room temperature.

Prepare fire in the grill. Grill sausages directly over the fire, turning occasionally, until done. You can sauté the sausage in a skillet as well. Place sausage links in the rolls, add generous helping of sautéed peppers and onions. Serves 12
