Our Mother Rosella’s Peach Cobbler

Ingredients
  • 1/2 c. quick-cooking rolled oats
  • Dash of salt
  • 1/2 c. packed brown sugar
  • 1/4 c. butter or margarine
  • 1/4 c. all purpose flour
  • 5 cups sliced, peeled peaches
  • 1/2 tsp. ground cinnamon
  • Vanilla ice cream or light cream
Directions:
Combine oats, brown sugar, flour cinnamon and salt. Cut in butter, till mixture is crumbly. Set aside. Place fruit in a 6x6x2” baking dish. Sprinkle oat mixture over fruit. Bake, uncovered, at 350° till fruit is tender, about 40 minutes. Serve warm with ice cream or light cream. Makes 6 servings.We suggest you double this recipe and bake in a 9x13” dish.  Top with a scoop of Brunton’s vanilla ice cream for a quick and memorable dessert. Serves 10-12 people.
