Skillet Shrimp Scampi

  • 16 jumbo shrimp, peeled and deveined
  • 2-3 tablespoons quality olive oil
  • 1 clove garlic, minced
  • 2 tablespoons minced scallions or shallots
  • 2-3 drops of sesame oil
  • salt and freshly ground pepper
  • 1/2 teaspoon reduced sodium soy sauce
  • 1/4 cup dry white wine or vermouth
  • 2-3 tablespoons lemon juice
Saute the shrimp over high heat in olive oil, adding the garlic, scallions, sesame oil, salt and pepper.  After a minute, toss with the soy, a little fresh oil and the wine.  Remove to a bowl.  Reduce the pan juices to a syrup and pour over shrimp.  Add the lemon juice and toss several times.  Delicious hot or cold!
