Candied sweet potatoes and apples

  • 8 medium-sized sweet potatoes or yams
  • 6 medium sized Granny Smith
  • ¾ cup light brown sugar
  • 4 tablespoons of unsalted butter
  • 2 teaspoons cinnamon
  • 1-2 cups of miniature marshmallows

Preheat oven to 350 degrees. Wash and boil sweet potatoes or yams until skin is tender. Cool, peel and slice lengthwise. Peel, core and slice the apples into quarter-inch think wedges.

 In a 2 quart casserole or 9x13 baking dish arrange in layers the sweet potatoes or yams topped by the sugar, cinnamon and butter. You should have 3 layers in the 2 quart and 2 layers in the baking dish.

 Bake at 350 degrees for approximately 45 minutes. Arrange marshmallows on the top of your now delicious smelling treat and place under the broiler for approximately 5 minutes or until golden brown
