Our Aunt Norma’s Onion Pie

  • 1 1/2 lbs. of sweet onions (about 3 large ones) sliced thin
  • 1/4 c. butter melted
  • 3/4 tsp. of salt
  • 2 tbls. of flour
  • 1/8 tsp. ground nutmeg
  • 3 eggs plus 2 egg yolks
  • 1/8 tsp. cayenne pepper
  • 2 cups of half & half
  • 1/8 tsp. of black pepper
Cook onions in the butter for about 30 minutes, without a lid, until lightly browned.Then sprinkle 2 tablespoons of flour over the onion mixture and blend. (This part of the recipe can be made the day before and stored in the refrigerator).
Beat eggs and add half & half and other ingredients to the beaten eggs.
Arrange onion mixture in a 9 inch pie crust and pour egg mixture over onions.Bake in a 425° oven for 15 minutes. Reduce temperature to 350° and bake until set and slightly brown.
About 30 to 35 minutes. Let stand for at least 15 minutes before serving.
