Christmas Morning Strata

  • 1 lb McGinnis Sisters Country Breakfast Sausage, crumbled & cooked
  • 1 small sweet onion, diced
  • 1/2 yellow pepper chopped
  • 1/2 green pepper chopped
  • 1/2 red pepper chopped
  • 8 eggs
  • 4 cups milk
  • 1 teaspoon oregano
  • 1/2 teaspoon celery seed
  • 1 teaspoon dry mustard
  • 1 loaf Italian bread, cubed
  • 2 cups shredded cheese, sharp cheddar and Swiss recommended

Sauté onion and peppers in butter until translucent, about 10 minutes. Place bread cubes in bottom of 13x9 pan sprayed with Pam.  Pour sautéed veggies over bread cubes. Top with sausage.  Mix cheeses together and sprinkle over sausage. Pour the milk and egg mixture over top. Cover and chill overnight.

Let strata stand at room temperature 1 hour before baking. Bake in a pre-heated 325F oven for 45 minutes to 1 hour, or until set. To check, insert a knife into the center. When cooked thoroughly the knife will come out clean.

Cook's note: You can use any vegetables you have on hand, just be sure to cook them before adding to the strata. Bacon or ham can also be used instead of country breakfast sausage. This recipe is adapted from a recipe found in Southern Living Magazine in 1985.
