Bonnie's Orange Fig Pork Roast

  • 3 lb McGinnis Sisters Pork Cuisine Roast
  • 2 tablespoons olive oil
  • salt & pepper to taste
  • 1/4 teaspoon garlic powder
  • 1 orange
  • 1/2 cup water
  • 1 onion sliced thin
  • 1/3 cup of Dalmatia Orange Fig Spread
Preheat oven to 350 degrees.
Remove the zest from orange and reserve, cut orange in half. Heat Dutch Oven over medium high heat, pour olive oil into dutch and brown pork roast on all sides. Squeeze juice from orange over the roast, add 1/2 cup of water to pot and allow to boil for 1 minute. Sprinkle roast with salt and pepper, garlic powder and zest of one orange.
Put sliced onions on top and around roast. Cover and place in oven for 30 minutes. Next, spread 1/3 cup of Orange Fig spread over roast and lower heat to 325 degrees, roast for 30 minutes. Baste the roast with pan juices. Return to oven uncovered and roast for 30 minutes, or until internal temperature reaches 155 degrees. Total cooking time is approximately 1 1/2 hours in oven.
