Our Mother Rosella’s Baked Apples

  • 4 medium apples such as Gala, Empire, or Granny Smith
  • 3 tbl unsalted butter, softened
  • 4 tbl firmly packed brown sugar
  • 1 lemon
  • 4 tbl coarsely chopped walnuts
  • 4 tbl granulated sugar
  • 4 tbl chopped raisins
In a bowl stir together the butter, the brown sugar, the walnuts, and the raisins. Core the apples, peel the top third. Rub the peeled flesh with lemon and dip into granulated sugar. Spoon the butter mixture into the apple cavities, mounding it. Arrange apples in a baking dish just large enough to hold them. Bake apples in the middle of a preheated 375˚ oven, basting with accumulated syrup once or twice, for 35 to 40 minutes, or until they are tender. Baste the apples with syrup, transfer to a platter with a slotted spoon. Reserve syrup to serve on the side.
