Pan Seared Tilapia with Watercress and Mango Salad

adapted form of Real Simple
  • 4 Foley tilapia fillets
  • 1/4 cup plus 2 tsp olive oil
  • 2 Tbsp fresh lime juice
  • 2 tsp honey
  • 2 tsp fresh grated ginger
  • 1/4 tsp crushed red pepper
  • 6 cups watercress (stems removed) or any micro green
  • 1 mango, cut into small pieces
  • 1/2 medium red onion thinly sliced
 Season tilapia with 1/2 tsp salt and 1/4 tsp pepper. Heat 1 tsp of the oil in a large skillet over medium high heat. Add half the tilapia and cook 1-2 minutes per side, until the tilapia is opaque. Transfer to a plate and cook the remaining fillets with 1 tsp of olive oil.
In a small bowl, whisk together the lime juice, honey, ginger, crushed red pepper and remaining 1/4 cup olive oil. Add 1/4 tsp of salt and pepper. Toss greens with mango and onion.  Drizzle dressing over salad just before serving.
