  • 1 lb. Foley Nantucket Cape Scallops
  • 2 Tbl. olive oil
  • 2 Tbl. butter

Preheat non-stick sauté pan over med-high heat. Add 1 Tbl. oil and 1 Tbl butter. Add 1/2 the scallops and sear quickly 1-2 minutes. Remove to warm platter. Add remaining oil and butter to pan sear the remaining scallops.
