Foley Silver Cod Fillets with Tomato Basil Sauce

  • 4 Foley Snow Cod Fillets ( about 6oz. each)
  • olive oil
  • 2 tablespoons chopped garlic
  • 4 chopped scallions
  • 4 large tomatoes, seeded & chopped
  • 4 tablespoons basil
  • 4 tablespoons white wine
  • salt and pepper to taste
  • flour
For Sauce: Preheat pan over low heat. Add 1 tablespoon olive and garlic. Saute garlic 2-3 minutes. Add scallions, tomatoes, basil and wine. Simmer for 8-10 minutes or until cooked through. Season to taste. Keep warm.
For Snow Cod: Lightly coat fillets with flour. heat pan over high heat. Add olive oil. Saute Silver Cod quickly in olive oil  until both sides are brown, approximately 4 minutes per side. Remove from pan. Serve with Tomato Basil Sauce over fish with fresh steamed spinach or kale.
