Oven Roasted Spicy Beef Petite Roast

  • 2 McGinnis Sisters beef shoulder petite roasts (8 to 10 ounces each)
  • 1-1/2 teaspoons Spicy Three-Pepper Rub (recipe follows)
  • 2 teaspoons salt
  • 2 teaspoons dried oregano leaves
  • 2 teaspoons sweet paprika
  • 2 teaspoons dried thyme leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground white pepper
  • 1/2 teaspoon ground red pepper
  • Combine all ingredients and store in airtight container. Shake before using to blend.
Preheat oven to 425F. Press pepper rub evenly onto all surfaces of beef roasts.
Place roasts on rack in shallow roasting pan. Do not add water or cover. Roast in 425F oven 20 to 25 minutes for medium rare to medium doneness. Remove from oven when instant-read thermometer inserted into center of the thickest part of the roast registers 145F for medium rare or 160F for medium doneness. Let stand 5 minutes before carving.
