Seafood Romano

  • 4-6 serving size pieces of Captains Cod, scrod or tilapia
  • 1/4 c. light cream
  • 1 Tbl. olive oil
  • 1 lg. egg
  • 1 sleeve of Ritz crackers, crushed
  • 2 Tbl. dried parsley
  • 1 c. grated Romano cheese
Preheat oven to 400º. Lightly grease cookie sheet or 9 X 13 pan.

Mix the cream, olive oil and egg in a bowl. Place the fish pieces in the bowl and let soak for a few minutes. Mix the crackers, parsley and Romano cheese. Lift the fish pieces from liquid and shake off excess, dredge the fish in cracker mixture and place on cookie sheet. Bake at 400º till opaque, approx 12 minutes per inch of thickness. A thick piece of Captains cod can take 15 minutes but a tilapia fillet should be about 8-10 minutes.
