Spinach Stuffed Snow Cod

  • 4 Snow Cod portions
  • 1 bag baby spinach leaves
  • 1/2 cup Monterey Jack cheese
  • 1 slice bacon cooked and chopped
  • bread crumbs or Ritz cracker crumbs
Preheat oven to 450 degrees. Place baby spinach leaves in a food processor and process until chopped. Remove from processor and add Monterey Jack cheese and chopped bacon. Cut a pocket into the middle of each fillet. Add stuffing. Sprinkle bread crumbs over the top of each fillet. Pace on a baking sheet and bake for about 15 minutes.
