Yams with a Cobbler Topping

  • 1/4 c. Land O Lakes Butter (1/2stick melted)
  • 1/2 c. Sugar
  • 1 Egg
  • 1 tsp. Cinnamon
  • Ritz Cracker Crumbs (1 sleeve of crackers= 1 cup crumbs)
  • 1 c. Brown sugar
  • 1/2 c. Land O Lakes Butter (1 stick)- melted
  • 1/2 c. Chopped walnuts

Peel and cube yams. Boil 25 minutes in salted water till very tender. Drain potatoes well. Mash sweet potatoes with fork. Add next four ingredients and mix with fork. Spread mixture evenly in ungreased 13X9 pan. Mix topping ingredients with fork or wire whisk. Sprinkle evenly on sweet potato mixture in pan. Bake 30 minutes at 350. Hints: Best when served hot or warm - do not serve cold.
