Pan Seared Fluke with Maitre d Butter

Favorites from Foley Fish
Ingredients
  • 4 Fluke portions (1 fillet)
  • 1 stick butter
  • 1 shallot, chopped finely
  • 1 T lemon juice
  • Dash of Tabasco
  • 2 T parsley, finely chopped
  • 2 T red pepper, finely chopped
Directions:

Preheat oven to 450 degrees.  For the Maitre d’Butter combine butter, shallot, lemon juice, tobacco, parsley and red pepper. Set aside.


Season fluke with salt and pepper.  Heat oil in non-stick sauté pan.  Place fluke, cut side down, into pan and sauté for 1 minute.  Turn fish over and place in oven for 7 minutes.  After 7 minutes, add a pat of maitre d’ butter to each portion. Cook for an additional minute to allow butter to melt.
