Haddock with Bacon Basil Pesto

Favorites from Foley Fish
  • 2 pounds haddock fillets
  • 2 cloves garlic, chopped
  • 1/4 cup cooked and crumbled thick cut bacon
  • soft loaf of bread
  • 1 cup basil leaves
  • 1/4 cup parsley tops
  • 1 cup olive oil

Preheat oven to 450 degrees.  Combine garlic, bacon and bread in food processor; process to combine.  Add greens, process again.  Slowly drizzle in oil and process to combine.  Place haddock fillets in baking pan and top with pesto.  Bake for 10 minutes per inch of thickness. Serves 4.
