Corn on the Cob with Garlic-Basil Butter

  • 1/4 cup basil leaves
  • 3 garlic cloves
  • 1 tablespoon lemon juice
  • Pinch sugar
  • 1 1/2 teaspoons kosher salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 8 ears of corn
McGinnis Sisters home grown corn is so sweet and delicious, it is perfect with a simple spread of butter and a little salt and pepper.  But, if you are interested in a change, this variation is fabulous!

Place basil and garlic in a food processor. Pulse until finely chopped. Add lemon juice, sugar, and salt and process until thoroughly incorporated. Add butter and blend until smooth. Place butter mixture in a small serving bowl or ramekin.
Add corn to large pot of boiling salted water and cook until just tender, about 5 minutes.Transfer to a platter and serve with garlic-basil butter.
